Ours is an original recipe based on a long tradition of Porter and Dark Ale celebration cakes. We have revived and adapted the old recipes, using both traditional and native fruit to come up with a cake that we feel is uniquely Australian. Each cake comes with a product information card. We will gladly add a greetings card with your message on it (handwritten) at a nominal cost.

There are around 38 separate ingredients in the cake. Several are indigenous to Australia: the Macadamia Nut and its Oil, Riberries (Lilli-pilli) Davidson’s Plum and Rosella (rainforest fruits), the leafy Aniseed and Lemon Myrtles, a spicy Mountain Pepper and ground Wattle seed with its coffee like-flavour. All these ingredients come to us direct from Growers we know personally and who are spread across Australia, from the Eyre Peninsular on the edge of the Great Australian Bight to the rainforests of the Atherton Tableland in Far North Queensland. Closer to home, we grow Macadamias ourselves on our farm near Byron Bay.

We use at least 10 different kinds of fruit, 10 spices, Single Floral Australian Honey, Ginger from the Sunshine Coast, a Dark Ale brewed in Sydney since 1869 and Australian Brandy from the Barossa Valley in South Australia. The cake is Dairy free. The only animal products used are eggs and honey.

The Australian Bush Christmas Pudding (750g) $28

We love our Christmas Pud in Australia, but with the summer sun blazing and everyone already stuffed with good food, a dessert made heavy with suet or other animal fats just doesn’t sit right – on the tummy or the conscience.
The Australian Bush Christmas Pudding is a lighter style of steamed pudding; rich in fruit, macadamia nut, spices and brandy but with no suet, no breadcrumbs, no dairy, no added salt and no artificial flavours or colours.  It is sold in the bowl in which it was made, which means less handling, better hygiene, recyclable packaging and greater convenience on a hot and busy day. 
You just pop the pudding in its boil-proof bag into the steamer to heat it up.  No foil caps or string or fiddly stuff required.  You can also heat it by microwave (approx 6 minutes) or even eat it cold – but you wouldn’t want to miss out on the fun of setting it alight, would you?  Instructions are on the bag.
The Australian Bush Christmas Pudding costs $28 and serves 6-8 people.
