We use the beautiful ginger grown on Queensland’s
Sunshine Coast in our Christmas Cakes, but it is so fragrant and
exotic an ingredient that we felt it deserved a Cake of its own.

Inspired by such classics as Yorkshire
Parkin, George Washington Gingerbread and Irish Tea Brack we have
created a bar-shaped cake that we hope will become a classic in
its own time.
The cake weighs a minimum 425g. Like all really good gingerbread,
it has a moist, fudgy texture that keeps well, but that is where
any similarity with any other ginger cake on the market ends.
Our Australian Ginger-Lover’s Cake is unique.
We use five styles of Ginger in the mix, ranging from the fresh,
raw ginger to the sweet and spicy preserved product.
We use Macadamia Oil instead of animal fats, resulting in a cake
that has less than 6 grams of Saturated Fat in total.
We throw in a few Australian Vine Fruits soaked in Rum and some
chopped Macadamia Nuts from our farm near Byron Bay.
Then we finish the cake with Ginger Syrup and thin slices of premium
Glace Ginger.
There are plenty of Ginger Cakes out there for the faint-hearted.
This is not one of them.
The Ginger-Lover’s Cake comes in a transparent, waterproof
pack, heat-sealed for freshness. It will not slice thinly. To serve,
tear the ends of the paper pan and cut the cake into chunky slices.
Halve the slice for the less greedy.
